Parmesan Zucchini & Corn

Whether you are in charge of the BBQ sides or a side at Thanksgiving dinner you can not go wrong with Parmesan Zucchini & Corn, and it only takes 10 minutes to make.

Ingredients:

2 Tbsp - Olive oil

3 Cloves - Garlic, minced

4 - Zucchini, diced (medium sized)

1 Cup - Corn kernels 

1/4 Tsp - Basil

1/4 Tsp - Oregano

1/4 Tsp - Thyme

Salt & Pepper

2 Tbsp - Lime juice

2 Tbsp - Fresh cilantro

1/2 cup - Freshly grated parmesan

Instructions:

Heat olive oil in a large pan over medium heat. Add garlic, cooking for about 1 minute. Stir in zucchini, corn, basil, oregano, and thyme. Cook and stir occasionally until the zucchini is cooked through (tender), about 5 minutes. Add to taste salt and pepper.

Stir in lime juice and cilantro, serve immediately topped with freshly grated parmesan.
